Product Introduction
Bromelain (bromelain for short) is a pure natural plant protease obtained from the peel and core of pineapple fruit by biotechnology. Its molecular weight is 33,000 and its isoelectric point is 9.55. It mainly contains various ingredients such as protein hydrolase. The activity specification is expressed in GDU/g, and the highest activity specification can reach 3000GDU/g. It is a light yellow-brown powder with rich pineapple aroma. Bromelain is a sulphoside protease. Its active center is sulphoside (-SH) and it can carry out various biochemical reactions such as protein hydrolysis. It can be widely used in food, medicine and biological industries.
Product Function
⒈Inhibit the growth of tumor cells. Relevant clinical research observations have shown that bromelain can inhibit the growth of tumor cells.
⒉Prevention and treatment of cardiovascular diseases Bromelain, as a proteolytic enzyme, is beneficial to the prevention and treatment of cardiovascular diseases. It can inhibit stroke caused by platelet aggregation, relieve angina symptoms, ease arterial contraction, and accelerate the decomposition of fibrinogen.
⒊Used in burn scab removal Bromelain can selectively remove the skin, so that new skin transplantation can be carried out as soon as possible. Animal experiments have shown that bromelain has no adverse effects on adjacent normal skin. Local use of antibiotics does not affect the effect of bromelain.
⒋Anti-inflammatory effect Bromelain can effectively remove inflammation and edema in various tissues (including thrombophlebitis, skeletal muscle injury, hematoma, stomatitis, diabetic ulcers and sports injuries), and bromelain has the potential to activate inflammatory responses. Bromelain can also relieve diarrhea.
⒌Enhance nutrients and drug absorption. Combining bromelain with various antibiotics (such as tetracycline, amoxicillin, etc.) can improve their efficacy. Related studies have shown that it can promote the transmission of antibiotics at the site of infection, thereby reducing the dosage of antibiotics. Product Application
Application of bromelain in food processing industry:
1. Baked food: Adding bromelain to dough can degrade gluten, and the dough is softened and easy to process. It can also improve the taste and quality of biscuits and bread.
2. Cheese: Used for casein coagulation.
3. Meat tenderization: Bromelain hydrolyzes the macromolecular protein of meat protein into easily absorbed small molecular amino acids and proteins. It can be widely used in the fine processing of meat products.
4. Application of bromelain in other food processing industries: Some people have used bromelain to increase the PDI and NSI values of bean cakes and bean powder, thereby producing soluble protein products and breakfast, cereal foods and beverages containing bean powder. Others include the production of dehydrated beans, baby food and margarine; clarified apple juice.
